The oil carried by the steam removed from the environment by the operation of the ventilation system accumulates in the hood, plenum and ventilation ducts. A fire occurs in filters, ducts or equipment (oven, fryer, grill, etc.).
Electricity and gas lines increase the risk of fire in kitchens. In case of fire, electricity and gas inlets should be closed. The fire is prevented from growing, lowering the extinguishing load and reignition.

Automatic hood extinguishing systems; shopping malls, factories, hospitals, hotels, restaurants,… etc. used in the kitchens. It detects the fire in a very short time and extinguishes it with the least damage in the hood fires that may occur, especially in the absence of people in the kitchens. Heat sensitive fusible type detectors are used for every cooking equipment and in every ducts or in the hood with 60cm intervals and in every ducts. These detectors contain heat-sensing fusible link. The system performs the detection and extinguishing function automatically, and the system can be operated manually with the manual pull and discharge button. Pull buttons allow manual operation of the system in case of fire. The buttons should be placed on the escape route and in easy-to-reach places.
